Let’s be honest in the heart of London being an eco-worrior comes with its challenges.
Unfortunately, we haven’t got a garden in order to grow our vegetables or a local lake to fish in; but we do everything in our power day to day to make sure we are keeping our environmental footprint as low as possible.
OUR WINE LIST IS EVER EVOLVING
We continuously invest and proactively research to find new hidden gems. Marco Nardi, our Head Sommelier has definitely taken our cellar to the next level. Our wine list focuses on producers of various sizes from France and Italy, but all hold the common philosophy of sustainability, expressed in a Natural, Organic or Biodynamic way depending on the producer. This type of commitment on the part of the producers marries directly with the philosophy that the restaurant holds when it comes to zero waste.
SEASONALITY, PROVENANCE, SUPPLIERS
Our menu is small, authentic and always reflects seasonality!
Using fruit, vegetable, livestock and fish “in season” is not only logical but most importantly: ethical. We make it our priority to work alongside producers and suppliers that are physically “as close to us as possible” and in keeping with our mindset.
This doesn’t mean we refuse to purchase certain ingredients from abroad! Our owners (Emily and Diego) from French and Italian heritage love to share some of their favourite products from “home” ie: Extra aged balsamic vinegar from Modena, piment d’Espelette from the Basque region.
All ingredients and produce that make it to our kitchen are used up in their entirety (head to toe approach).
As an example, we currently hold a delicious starter of Red prawn. Where the flesh of the prawn is served in a tartare, the head is fried and delightfully crispy, the carcass is dried up and powdered to make a prawn cracker.
A FEW PEOPLE WE WORK WITH
Flying fish seafoods: “We want our children’s children to enjoy the ample stocks of seafood we have now. So, we buy from day boats run by responsible fishermen”.
Lake district farmers: “To produce a sustainable future for fell farming in Cumbria.”
Energy efficient Filtered water dispensers – reduce glass bottles/ mineral water for customers but also eliminate plastic bottles from our work place - Aqua Libra is a company at the forefront of sustainability. Their moto being: REFILL. REUSE. REPEAT. COLLECTIVELY.
Food waste – collected by our local authority and directed to an anaerobic digestion plant in north London, where it will be used to generate power for homes and organic fertilizer for use by farmers.
