Diego Ferrari
Diego was born in Milan and started working in his local “ristorante” when he was just 14 years old. At the age of 20 he chose to move to Paris, learn a new language and pursue a culinary career underneath the guidance of Alain Ducasse. Before starting this venture with wife Emily, Diego spent three years as Head Chef of Le Gavroche**.
Emily Roux
Emily was born and raised in London into the most gastronomic of families. Her passion for food started at a young age and she has continued to follow in her father’s footsteps dedicating her life to culinary excellence. At Caractère, Emily can be found in the kitchen, FOH or answering the phone and emails: a real “jack of all trades”.
Mattia Nardi
Mattia started his journey in hospitality at the age of 15.
His passion for food took him straight to the kitchen; where he grew through the ranks of prestigious hotels in Italy. 5 years later with a new challenge in mind he decided to move to the UK, learn a new language, study management, wine and Tea! This slowly but surely brought him to a customer facing position at L’Ortolan* in Reading. After only a couple of years and consecutive promotions he took on a new challenge at Seasons where he held the position of Restaurant Manager. Mattia is now ready to embrace this new and exciting adventure at Caractère.
Gaetano Farucci
Born in Apulia, Italy, Gaetano graduated from culinary school and worked nearby before coming to England to start his career at Le Gavroche** in 2013 (which is where he met Chef Diego). He began as a commis-chef before consecutive promotions, he received the prestigious title of Head Chef in 2018. His passion, talent, dedication and determination have made him gain family status. Gaetano has recently been appointed as Head Chef at Caractère. He’s here to reach new heights and bring his personal touch to our ever evolving menu!
Marco Nardi
Our head sommelier began his career in native Italy. A passion for fine dinning took him to the Palace Hotel in Gstaad, Switzerland where he discovered his true calling, wine! Since then, Marco has dedicated himself to oenology and the study of wine. With the ambition to further his knowledge and career he moved to the UK in 2014 and begun a new chapter at Chewton Glen hotel, working alongside mentor Francesco Gabriele. His passion and drive then took him to the Michelin star restaurant “L’Ortolan” in Reading. Marco joined the Caractère family beginning of April 2022 attracted by the owners shared passion of delicious food and wine.
